Recipe for the most delicioso healthy sweet potato and quinoa burrito ever:. 2-3 medium sweet potatoes, peeled and cubed. 8-10 mini sweet peppers, diced. 1 medium onion, diced. 1 tbsp olive or coconut oil. 1 tsp chili powder. Mix diced veggies together and toss with oil and spices. Spread flat on baking sheet and roast at 425 degrees for 20 mins. While that is cooking, combine the following in a large mixing bowl:. 1 large can black beans, drained and rinsed. 15-2 cups cooked quinoa.
