Confessions of a Thirty-something. Chicken Broccoli Slaw Stir-fry. This is SO much better than it sounds, brace yourselves. Cooking spray (I use TJ's Coconut Oil Spray. 3 teaspoons olive oil. 1 pound boneless/skinless chicken breasts, cut into bite size pieces. Lemon juice (1 lemon). Cooking spray, I like using olive oil spray. 6 cups broccoli florets. 1 (12oz) bag broccoli slaw. 1 cup snap peas. 1 cup chopped red bell pepper. 1 cup sliced scallions. 2 tablespoons chopped garlic. Or low sodium soy sauce).
