Monday, January 23, 2012. Once again, your Monday is my Saturday. Today has been a great day even though I woke up to the gray clouds and the melting away of the snow from the rain in January. (p.s. last night there was a thunderstorm. In January.). We've enjoyed all the meals we've eaten. To be honest, I do not miss meat at all. The hardest part is the eggs and cheese. I don't miss milk because I thoroughly enjoy soy milk. I tired the vegan gourmet soy cheese and it was nasty. I couldn't handle it.

Friday, January 28, 2011. Chocolate Chip Cookies and Happiness. I am a big BIG fan of chocolate chip cookies. Seriously, I used to come home from school and eat like 6 cookies with milk. Pretty consistently (leading to my middle school chubbiness). I don't like when homemade cookies get hard. It irks me really bad! Wednesday, August 31, 2011. I work night shift tonight so I had all day today to enjoy the weather and relax. Everything about today so far has made me appreciative of my life:. I slept in until 11. I woke up to fresh coffee (thanks husband! And a bowl of Cinnamon Toast Crunch. ;-). I hung out with Matt for a couple hours. I meandered around Target for awhile after grocery shopping. I baked homemade orange almond biscotti. I drank sweet tea out of a mason jar with a lime. I will rejoice and be glad in it".

Wednesday, September 28, 2011. So, I had today off and it has been a DELIGHTFUL day! I slept in, went to the grocery store for the ingredients for my cake! Today was the day I made the cake for my manager who is actually changing jobs. I am so glad I practiced the other day! It helped give me more of an idea of how I wanted it to look and changes I need to make! Here is the final product! It looks so much better than the first and I am so proud of it! He has had this whole thing planned! I had no idea!
