Curd - 1 cup. Onions - 1/2, chopped. Cucumber - 1/2, chopped. Salt - as per taste. Cumin powder - 1 tsp. Boil, Peel and puree the beetroot. Whisk the curd in a bowl and the pureed beetroot, give it a mix should give a nice dark pink color. Lovely isn't it? Garnish with mint leaves and serve. Enjoy and Good luck :).
