I eat, therefore I am. Friday, 2 May 2014. Cova Caffe-Ristorante - 3. 又收到cova的贈劵, 人忙得不可開交, 可是不用就會浪費。幾經波折, 終於能在到期日前來吃晚飯。 Smoked eel, onion sour cream and pan-fried polenta with balsamic vinegar. Amuse Bouche是小小一件煎玉米餅polenta, 米玉味略淡, 上面那片魚也不似是鰻魚。 US prime beef tartar and carpaccio with candied citrus, old age balsamic and mousse of Parmigiano Reggiano. 我是個生牛肉怪, 韓式英式法式的我都吃。這個生牛肉兩吃, 先由左邊的beef carpaccio開始。 生牛肉薄片配鹹香的parmesean cheese, 及火箭菜獨特的芝麻菜香, 味道非常匹配, 但醬汁的意大利陳醋不明顯, 反而檸檬味就有提鮮的作用。 Mango and pistachio gelato.

Sunday, 31 March 2013. 43° South Tasmania Cherries. 前陣子是 澳洲塔斯曼尼亞櫻桃 (Tasmania Cherries). 的造季。這個品種的櫻桃有謂'The biggest and the best cherry on earth', 當今世上最大最佳的品種, 可以稱王。產地為塔斯曼尼亞, 在南緯41-43度一帶氣候水土俱佳, 很適合各種果子生長, 有櫻桃, 葡萄, 杏李等。產地好, 櫻桃品種又生得大又甜, 自然會受青睞, 可是在香港不被注意。想是產量受控制, 而且消費者覺得近數百元買一盒才幾十顆的櫻桃不划算。 好吃是真的, 但最佳又很難說得上是。起碼我心目中還有另一櫻桃界王者 佐藤錦櫻桃. 盒子雖大, 但櫻桃個子也不小, 裝得只有數十顆。 喚它作櫻桃好像有點奇怪, 因為它每顆幾乎有荔枝大小 (圖中的是男人手), 是同種中的巨無霸, 不太配上櫻桃這嬌滴滴的名字。有些連葉拔下的就很可愛。 Sunday, March 31, 2013. I eat, therefore I am. Sunday, 25 May 2014. Roast spring chicken, garlic and potatoes. Saturday roast at home - French spring chicken, Hoikkaido Byron potatoes ( 男爵薯). Local garlic. For seasoning, I got cocktail salt from Japan Takaosan (高尾山). Which is a mix of mineral salt, dried orange peels, shiso. Bell pepper, etc. Herb is rosemary from Spain. And finally, a bit of dressing made of Austria honey, and whole grain mustard from Reims, France. My kitchen is quite globalized. Sunday, May 25, 2014.

Paul Bocuse他老人家似乎只偏愛日本, 在日本開了fine dinning restaurant, patisserie, cafe, 甚至在大阪的大丸梅田有熟食外賣店, 連上海都有烹飪學校, 就是不肯來香港開店。老實說, 我覺得香港的culinary scene毫不失禮, Joel Robuchon, Pierre Gagnaire都已先後登陸, 怎麼我們仍未得Bocuse青睞。所以我的Bocuse experience全部都是在日本。 在計劃金澤的行程時, 意外發現了原來Paul Bocuse在此跟 ひらまつ亭. 合作開店, 就在地標 しいのき迎賓館. 之内。這館是大正年間留下的洋式建築物, 所以別有歷史感及高雅。 樓底高, 用上大幅落地玻璃窗, 自然光照得一室光潔明亮, 最佳的裝飾就是落地大窗外的金澤城石垣及草地。 說實在的, 作為一個light lunch的主菜份量也真的太少, 意粉只有聊聊幾條, 令我想起在 Ammo.

Saturday, 26 April 2014. ヒルトップテラス Hill Top Terrace. 一趟, 賞櫻, 遊城堡, 看海景。城雖小但真夠令人盡興 - 尤其是當天氣好, 又有櫻花綻放。 走得累了, 見到城腳底下有一間小亭, 賣咖啡及輕食, 便入去歇腳。環境乾淨整齊, 是典型的和洋式小食堂樣子,但景觀絕佳 - 地處山崖邊, 背後是熱海城伴櫻花, 前面是相模灣的遼闊海景, 推側門出去就是露天部份。故此名為Hill Top Terrace. 我點的一件cream cheese cake. 雖喚作cheese cake, 但不見得有芝士味。外面灑了一層薄薄的糖霜, 但不太甜。奶香十足, 倒像是一件牛奶味mousse cake. 熱海位處抹茶之鄉靜岡県, 少不了有各式抹茶味產品, 包括這個軟雪糕。牛奶味香濃, 質地比一般軟正糕結實了些, 但抹茶的回甘都十分逼真, 我不是抹茶的擁躉亦覺得不錯。 ヒルトップテラス Hill Top Terrace. Thursday, 4 December 2014. 以下評論及食品供應質素絕對有偏私成份, 敬請自行判斷。 今次是特地去拜訪私房菜老闆, 答謝他送我結婚金鈪的厚禮, 當然亦要順道捧場捧場。私房菜已經開業多時, 我還是第一次去。 地點是偏遠的大棠, 但在大路旁, 所以駕車去還不難找到。老闆還在旁邊開多一間地產公司, 做私房菜亦做大茶飯。 先聲奪人的巨型花竹蝦, 用頭抽爆炒, 由蝦頭到蝦尾都入味, 肉質結實鮮美。 其實還有煮豆腐, 沙羗雞等, 但我的焦點只會是海鮮, 其他的留給別人好了。 海捕黃油蟹稀少, 而且貨源及水準不穩定, 不是每隻都會'爆油', 可能只是有少許。但在我面前的起碼都是蟹羔滿瀉。野生海黃油的天然油香及甜味絕非'照燈貨'可比, 更不用說什麼大閘蟹了。 亦是海捕貨色。金鼓是我愛吃的魚之一, 養殖的金鼓其裙邊會有一陣苦澀味, 但海捕的就完全不會有。肉質鮮活彈牙, 連魚皮都滑溜可比花膠。一定要即場全條幹掉才對得起老闆。 Thursday, December 04, 2014.
