Kevin Learns To Cook. I post, sometimes. Butter Pecan Ice Cream. This is really a combination of a Alton Brown Good Eats Episode and All Recipes’ Butter Pecan Ice Cream recipe. I lowered the amount of brown sugar, which many of the commenters suggested. I also doubled the number of eggs, and I only used the egg yolks. AB’s ice cream has a 1 cup of liquid to 2 eggs ratio, which I decided to use as well. But, the addition of the eggs yolks gave it a smooth, creamy texture that Del Toro’s did not have.

No picture because it was a bit ugly, and I did it in the microwave because I was in a hurry. Walnuts (half a handful). If you need a recipe, AB has one. Kevin Learns To Cook. I post, sometimes. This is sort of a play on the croquette’s in Jose Andres’ book Tapas: A Taste of Spain. I added more meat and cheese and used panko instead of standard break crumbs. I am calling them summertime croquettes because it is full of leftover ingredients you might have in the fridge in the summertime. Here is the general recipe I used, but please do not consider this exact. There is a lot of tasting and altering as we went. 1/4 an onion, diced small. 1 Stick of butter.

Which are wonderful, but do not require leavening of any sort. Bread. leavened by yeast, is a bit of a pain in the butt. But, oh goodness, is it delicious. Smitten Kitchen’s New York Rye.
