During the sikha season (August March) we have a small team of professional deer stalkers who shoot the sikha deer on our farms which we then hang and butcher in our premises. Out of sikha season (or when the deer aren’t anywhere to be seen! We use a larger supplier based just outside of Wareham whose deer are all sourced within Dorset as well. From 13. 05/kg. GWR HOLE and SONS. The rolling Purbeck hills are ideal for sheep farming, with it's rich clay soil and moderate climate virtually guaranteeing 12 months grazing throughout the year. As a result, the lambs are outside all year, and almost entirely fattened off grass with a little supplementary feeding in the colder months to give us a carcass that is lean but with just the right amount of fat for better cooking and flavour.
