Friday, October 15, 2010. Apple Pancakes with Cinnamon and Sugar Cream Cheese. I love cooking and baking in the fall. There are 2 reasons for this: Apples and Pumpkins! Today I came up with a new pancake recipe and it is applesolutely my new favorite. I think you'll like it too! Apple Pancakes with Cinnamon and Sugar Cream Cheese. 1/4 c old fashion oats. 3 tsp baking powder. 2 T sour cream. 1 cup apple juice. 1/2 cup diced apples(i used jonagold). 1/4 c cream cheese, softened or whipped.

White Sour Cream Wedding Cake. 1 box white cake mix. 1 c all purpose flour. 1 c granulated sugar. 1 1/3 c water.

Saturday, January 29, 2011. Muesli was one of my favorite things to eat on my mission in Estonia. Pair it up with their awesome yogurts and fresh fruit and it was the perfect breakfast. Muesli, however, is hard to find here in the states, and it's expensive. So, I've made my own. It's not quite as good as the stuff in Estonia, but it's still good. 1 1/2 c 5 grain hot cereal mix. 1 c natural trail mix. 1/4 c flax seeds. 1/2 c chopped dates. 1/2 c puffed rice. Super natural, yummy goodness.

Thursday, May 27, 2010. Want an easy mint brownie recipe: Here it is. What you need: your basic brownie mix(eggs, oil, water) and Andes baking chips. What you do: make and bake the brownies per package directions. Immediately upon pulling out of oven, cover with Andes chips and spread. I used half the bag of Andes chips on one box of brownies. It was minty enough. But if you want lots of minty goodness go ahead and use the whole bag of chips. Results: Super yummy minty goodness. Monday, May 17, 2010.

Erika started having contractions at 12 am today and we went to the hospital at 1am. Her water broke soon after and the baby was on his way. No time for an epidural!
