It's adapted from a recipe in the November 2009 issue of Cooking Light, so it's healthy too! 2 1/4 cups all purpose flour. 2 1/2 teaspoons baking powder. 2 teaspoons ground cinnamon. 1/4 teaspoon ground cloves. 1 cup packed brown sugar. 1/4 cup butter, at room temperature. 1 teaspoon vanilla extract. 1- 15oz can pumpkin (not pumpkin pie filling). 1/2 teaspoon vanilla extract. 1- 8oz package cream cheese. Preheat the over to 350 degrees.

Most of the time, only the skin is left, but on the rare occasion we have leftovers we use it in a quiche. It turns out the quiche is pretty darn fantastic too, so now we make sure we have leftovers. This quiche recipe started from one we found on. Salmon and Goat Cheese Quiche. 1 refrigerated pie crust. 1 tablespoon olive oil. 1 small onion, chopped.
