Kitchen Chemistry 2016: Thursday Kitchen Chemistry

http://kitchenchemistry2016.blogspot.com/2016/01/thursday-kitchen-chemistry.html

Thursday, January 7, 2016. This morning we watched a video about gluten and replicated the experiment. We combined water with flour; each person had a different type of flour (ex. cake flour, whole wheat flour). Then we rinsed the doughs in water until all of the starch had washed away leaving only the gluten. After we tasted all eight different cookies, we were split on the regular and thirty six hour cookies for the favorite. Subscribe to: Post Comments (Atom). COOK trip - Blog Post. Tuesday, January 12, 2016. January 12, 2016 at 5:30 AM. I agree that Shola focused more on the chemistry of the food and that his dishes were simpler. I think he made his dishes simple, like pasta and pizza, because the chemistry behind them was still interesting, and he had intriguing tools and techniques to make each. Chef Allen also used interesting machines, but I think he focused more on complex dishes, too, while using different techniques combined. Subscribe to: Post Comments (Atom). The Chemistry...
