I was looking for a way to spice up my boring salad lunches, so I decided to make this easy salad after seeing something similar on Martha Stewart's website. This was super easy and I was actually excited for lunch today! I filled Tupperware with some leafy greens and baby carrots. Friday, January 30, 2009. Spaghetti Squash with Pomodoro Sauce. SELF, November 2002. Nope, this is not pasta! I love spaghetti squash and this was a really easy, healthy week night dinner. You can add pretty much any vegetable to the mix, but we just happened to have all of the ingredients in our kitchen (that never happens! The sauce is really great by itself and would definitely work with regular 'ol pasta too. 1 spaghetti squash (about 1 1/2 lb). 2 cloves garlic, peeled and minced. 2 tsp olive oil.

Wednesday, June 17, 2009. Chocolate Chip Banana Pound Cake. Bananas and I think at this point I've worn out every banana bread recipe out there! So I made him a pound cake! I've never made pound cake before and since I only had enough bananas to make one loaf, I didn't get to actually taste it. So, I'm not sure how it turned out. However, it smelled divine and was very heavy so I think it was a success! Although, like I said, it was certainly heavy! I will have to wait for the reviews to see how it tastes.

This soup/stew was very good- even though the preparation of the Kale was a bit involved. However, given the simplicity of the rest of the recipe it is worth it! A great alternative to a tomato-based soup (which is what I usually make! It is even better the next day! 1 1/2 pounds kale leaves, center ribs and stems removed. 3 tablespoons olive oil. 1 cup chopped peeled carrots.
