I've had a chest cold for about a week, and then I ended up in the ER on tuesday night (yup, that's right folks. spent Valentines in the ER) with severe back and abdominal pain, which ended up being a kidney infection. Who knew they would hurt so much? Step one: Making the stock. Step 2: Making the soup! 1 bag no yolk noodles (I prefer the extra wide kind- they're cuter).

Lasagna sounded good, but all of my noodles were broken! I decided to use them anyways and approach it more like a casserole, so this recipe was born late at night after a crazy day. And wow, did it make me feel better! Here's hoping it can give you the boost you need to keep going after a long, tough week. You will need. 1 onion, sliced.

I love this, as sometimes I can't afford to shop at local stores like this because they have to up their prices to cover rent. If you are ever over this way in Portland, you should check it out. It is also right next door to Big Sky Bakery, so you can grab some bread or a sweet treat while you are there- yum!

A thick acrylic paint (one that has good coverage and isn't too opaque, we used System 3 acrylic by Daler Rowney in Sap Green). The trail is around 8 miles round trip, and it is considered to be an advanced one. It took us around 5.5 hours, including a pit stop for lunch. Roast beef sandwiches, YUM! Where will your next hike be? The stream that runs the whole way down the mountain. I love the little rock piles people make along the way! The main waterfall on the trail. The cutest little mushrooms ever!

So those of you that live in warmer climates are probably thinking that I am NUTS! Why would I want to eat stew when it is warm out? Stew is for WINTER, you silly person! Old Time Beef Stew. Recipe adapted from Paul Dean. 2 pounds stew beef. 2 boxes low or no sodium beef stock (that's 8 cups). 15 tablespoons Worcestershire sauce. 1 clove garlic, peeled and smashed.
