Schezwan Vegetable Fried Rice. SCHEZWAN VEGETABLE FRIED RICE. Basmati Rice - 500 g. Dried Kashmiri Chilly (whole) - 25 g (15 nos). Garlic cloves - 15 g (12 nos) 45 g (1/4 cup finely chopped). Chopped Ginger -1/4 cup loosely packed. Tomato Puree - 75 g ( 1 1/2 medium tomato). Water - 2 cups to cook rice. Onion - 200 g (2 1/2 medium size finely chopped ). Vinegar - 1 1/2 tbsp. Sugar - 3 tbsp. Salt - 1 1/2 tsp for sauce 1/2 tsp for vegetables as required for rice. Carrot - 140 g ( 1 cup finely chopped ).

Healthy Milk Puri for Kids. Wheat Flour - 280 g plus for dusting. Kerala Banana (poovan variety) - 3 small (145 g before peeling). Ghee - 1 tsp. Milk - 3/4 cup or as much needed to make a tight soft dough. Salt - 1/2 tsp or as per taste. Turmeric - 2 pinches. Oil to deep fry. In a wide mouthed bowl tip in the wheat flour. Add in the ghee. Mix with your hands to form slight crumbs. Add in the bananas. Mash them and mix into the flour. Rub in everything together. Slide each rolled out puri into the oil.

Chilli powder -1 Tsp. Turmeric powder - 1/2 Tsp. Coriander powder - 2 Tsp. Chicken masala/Meat masala – 1Tsp. Coconut milk - 1/2 cup. Soak the cauliflower floret in warm water mixed with a pinch of turmeric and salt for around 15 minutes. Wash and drain the florets and keep it aside. Add Tomato and mix well.

Kitchen closed due to illness: I am sick of COOKING! Friday, 21 October 2011. Paal payasam (Milk pudding). Broken rice(onakkalari) - 1/2 cup. Milk - 1 ltr. Cardamom - 10 pods (powdered). Cashew nuts - 1/2 cup. Raisins - 1/2 cup. Ghee - 1 tbsp. Soak the rice in water for 1 hr. Fry the cashwes and raisins. Take a cooker and add rice,sugar and milk into it and mix them well. Close the cooker and keep the flame high until the steam started coming. Put the cooker weight . Lower the flame and cook it for 1/2 hr.
