Just a few of my favourite things. January 7, 2012. Oh sweet carbonara. So easy to make . so rich and so perfect during the winter months. 500g dried penne (I prefer linguine). 10 slices of pancetta. 100ml double cream (I use whip cream). 125g parmesan (I like reggiano the best). Cook the pasta till al dente. Slowly fry the pancetta in a little olive oil until crisp – break up and leave it aside. In a bowl whip up egg yolks, cream and 1/2 the cheese.
