I used the blackberry BBQ sauce on an ancho chili rubbed pork shoulder that I braised until it was so tender that it shredded with the slightest touch of a fork. I served it with a cilantro and lime slaw and a refreshing cucumber salad. As an homage to my hometown Eastern NC BBQ I nestled that sweet and spicy pork between some delicious soft white burger buns. Um, yes please!

North Carolina BBQ has varied types of sauce from the east coast to the mountains but the common thread is that we are fond of the pig! It’s redneck prosciutto, y’all! 1/2 cup extra-virgin olive oil. 1 tablespoon herbs de Provence. 10 oz jar of plum jam.
