A little tip about meats. Here area a couple of tips from my friend Ronald Eveleens from Finland. Once he meat has been seared you can lower the heat, so the meat is cooked on the inside. You can add your marinade, or a sauce, such as for example barbecue sauce, when your meat is quite far along in the coking process. Due to the lower cooking temperature, the sauce will not burn, and slowly thicken, something you can counter by diluting the sauce with some oil before you baste the meat. August 11th, 2015.
