I found a recipe online that looked nice but I wasn’t quite happy with it and decided to chop and grate… oops I mean… change it a little and this is what I ended up with… An incredibly quick and simple dish that is ready in about 30 minutes and OMG-so-delish! Serves 2. Simply double or triple,depending on how many you wish to cater for. 2 spring onions or 1 small onion chopped. 1 large garlic clove finely chopped. 1/2 cup chicken stock.

The chicken needs to marinate for a few hours in the fridge, so if you want you can either prepare it the night before or just before you go to work. It takes only a few minutes. This meal serves 3-4 people depending on how hungry your guests/family are. 4-6 pieces of chicken thighs and drumsticks. 3 Tbsp Olive Oil. 3 Tbsp Dijon Mustard. 1 Tbsp Brown sugar (heaped). 1 tsp Black pepper. 1 cup chicken stock.
