The island’s micro-climate and exceptional exposure to sunshine, influenced by the Gulf Stream, make a powerful contribution to the quality of the potato. The island is surrounded by the enclosed warm waters of the Bay of Bourgneuf, with all the advantages of a climate that is gentle and damp in winter, and dry and sunny in spring and summer. Lastly, the use of wrack rich in minerals and substances which enhance growth, adds the character and fi nesse for which this potato is famous.

Planted on February 2nd Candlemas – on a bed of wrack, the Bonnotte of the Isle of Noirmoutier has everything it needs to reproduce its qualities as an ‘early’. It is in peak condition, taste-wise, 90 days later. The Bonnotte thus remains a Garden Potato, demanding very special attention from the grower – as much as is demanded of a gardener for a flower.

For the Bonnotte, the traditional farmers of Noirmoutier Island employ a unique technique that consists of forming parallel rows of earthen mounds 70-cm wide, called “billons”. This allows for the rapid warming and draining of the soil. It also provides the potatoes with maximum aeration. The artisan farmers of Noirmoutier’s early potato are subject to very strict requirements.
