Field greens, red onion and heirloom cherry tomatoes tossed with balsamic vinaigrette. Very easy and fast, and to top it off healthy! We won't count the brownies we had later! Learned to love it living in Tampa where Cuban food rules. Norm and I actually found this recipe in Southern Living and we made it while visiting Matt and Kami in Castle Rock, CO. It was so pretty I snapped this pic and stored it away in the digital abyss! Mussels, shrimp, chicken, chorizo and peas on a bed of yellow rice! Friday, September 5, 2008.

Sunday, April 18, 2010. 1 TBS Vegetable Oil.or less. 1/4 Cup finely chopped onion. 1/4 Cup finely chopped celery. 3/4 Crushed Saltine crackers (I use whole wheat). 1 TBS Dijon Mustard. 1/4 tsp Black pepper. 2 cans Salmon 7.5 oz each (I grill fresh or frozen 1-2 lbs. adjust recipe accordingly). 1 large egg lightly beaten. Sauté onion and celery in oil (I use less oil) for 4 min. Mix onion mixture 1/2 cup crackers, mustard, pepper, salmon and egg. Divide into patties and coat each w/ crushed crackers.

Favorite Chocolate Chip Cookies. 1 1/2 Cup Brown Sugar. 2 boxes of Vanilla instant Pudding (4 serving size). 4 1/2 Cups Flour. 1 1/2 tsp Baking Soda. 1 pkg White Chocolate chips (optional). 1 pkg Chocolate Chips (I use Milk Chocolate). Wednesday, March 24, 2010. 8 taco-sized (5 1/2") White Corn Tortillas. 1 lb Alaskan Pollack (I used ti lapia. Salt-Free Mexican Seasoning, such as Mrs. Dash southwest. I actually used a spicy rub that Scott makes). 2 Cups, slightly drained Coleslaw with Orange Cilantro vinaigrette (I'll post that at bottom). 1/2 Cup fresh pico. Season fish evenly with seasoning and salt. Remove fish, place tortilla in skillet to warm and crisp a little. Build tacos with fish, and orange cole. 1/4 Cup fat-free plain yogurt.

Monday, November 9, 2009. 4 large baked potatoes. 6 cups milk, whole or 2% (I actually use 1% and it's fine.). 3/4 tsp. salt. 1/2 tsp. pepper. 12 slices bacon, fried and crumbled. 2 cups shredded cheddar cheese. 1 cup sour cream (8 0z.). Cut potatoes in half. Scoop out pulp and put into small bowl. Melt butter in large pot. Add flour. Gradually stir in milk. Continue to stir until smooth, thickened and bubbly. Monday, May 25, 2009. 1 pkg yellow cake mix. 1/3 c vegetable oil. 1 tsp rum extract. 1 can (8 oz.) crushed pineapple in juice, undrained). 1 tsp coconut extract. 1 tsp rum extract. 1- 12 oz. container whipped vanilla frosting. Heat oven to 375 degrees. Place paper baking cup in each of 24 regular-size muffin cups. Stir coconut extract and 1 tsp. rum extract into frosting. Top each cupcake with coconut. . I made my own frosting with:. Powdered sugar.to taste. 2 tbsp of half and half. 1 t rum extract.

New Favorite: Ultimate Chocolate Chip Cookies! 3 1/2 cups all-purpose flour (spooned and leveled). 1 1/4 tsp baking soda. 1 1/4 tsp baking powder. 2 teaspoons coarse salt. 1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature (REAL BUTTER, UNSALTED! 1 1/2 cups packed light-brown sugar. 1 1/2 tsp vanilla. 1 1/4 cups milk chocolate chips. 8 ounces semisweet chocolate chopped. 2 cups chopped walnuts or pecans (optional).
