March 17, 2015. I’ve had you boiled. I’ve had you smoked. I’ve had you slow cooked. But I like you best- baked. As an Irish American tradition, many people eat corned beef, cabbage, potatoes, and carrots, especially around/on St. Paddy’s. I’ve experimented in curing my own corned beef and buying it already done too. Today is going to be a great day. March 13, 2015. There is something about the sunshine, milder weather, and it both being on a Friday, to really lift your spirits. But for today, I am happy!
