I found some wonderful produce at the farmer's market today, including delicious spring maui onions, and the best sweet potatoes I've ever had. Here's what I did:. Farmer's Market Lentil Curry. 1 cup red lentils. 2 small or 1 large sweet potato/yam, cut into 1 1/2-inch pieces. 2-4 Tbsp curry powder. 1 can coconut milk.
