A fresh, satisfying white with a subtle hint of oak. Vineyards from Carcassonne and the Minervois selected for the flavour of the grapes and the low yields. The grapes are chilled before pressing and then cold settled before fermentation of the clear juice. Around a third of the wine is fermented in French and American oak barrels, and remains on lees in the barrel, with stirring, for six months. The Languedoc is a vast vineyard region in the south of France, with around 300 000 hectares under vine. This is more than the entire vineyard area of Australia and New Zealand put together! Naturally such a large region has a wide variety of soil types and climates. BLACKBERET comes from the Aude department, whose capital is the medieval walled city of Carcassonne.
