Wednesday, March 30, 2011. An Adventure in Modernizing Portland Cuisine with Tabla's Anthony Cafiero. I am such a skeptic of modernist cuisine, with its gelatins, foams, savory sorbets, and wonky textures, but Im not skeptical of Anthony Cafieros talent - so last nights PFA. More about that later). I cook - He cleans. December 14, 2009. 2nd HBin5 Bonus Bread. The second bonus bread for the Healthy Bread in 5 is a delicious Whole Grain Challah with Cranberries, Orange and Walnuts. I had leftover Cranberry Relish that I had frozen after Thanksgiving, so I used that in place of the orange zest, dried cranberries and nuts. It turned out great! I cook - He cleans. November 23, 2009. Our Traditional Thanksgiving Bread. Our younger daughter LOVES the bread at Outback Steakhouse. I found this copycat recipe years ago and have been making it ever since. There are several versions on the web. This one doesn't have any food coloring, cocoa or coffee used to replicate the deep brown color of the restaurant bread - which is why I like it! Yields 2 large or 4 small loaves. 1T kosher salt (or use regular). 2 T canola or light olive oil. 2 cups rye flour.
