具有發泡性、凝固性和乳化性等特性，在炎熱的夏季裡最好是將蛋放入冰箱中冷藏保存，使用的時候再拿出來回溫。而在選購新鮮的雞蛋時，建議你可以把雞蛋對著光線看，如果蛋的透光度很好，而且蛋的外表摸起來粗糙，這個雞蛋就可能比較新鮮喔！ 牛奶的購買很方便，一般上超商或大賣場皆有販售各式各樣的品牌牛奶，也有區分為低脂、全脂或脫脂等牛奶，這部分的選擇可以依各人喜好，選用喜歡的牛奶或品牌來作為製作布丁的材料。 砂糖是西點製作時不可缺少的材料，除可增加甜味外，打蛋時加入也有幫助起泡的作用，是製作布丁的基礎材料之一。 動物性鮮奶油可融性佳，適合用來製作冰淇淋、慕斯、布丁等成品；植物性鮮奶油因可塑性較高且有甜味. 布丁最重要的特色就是帶有濃郁的蛋奶香味，但是卻偏偏有些人不習慣布丁中的這種奶香味道。如果能在製作過程中加入些許的來相互平衡，不僅有東南亞的風情味道，也降低了對蛋奶香味的排斥感。 訂閱： 張貼留言 (Atom).

今過這五次的明水研究我懂了許多有關布丁的知識和作法 雖然我只會用布丁粉做布丁不過我一次比一次做的好吃 尤其是最後一次我做巧克力口味時 受到大家的稱讚 我非常感謝他們因為他們讓我有了信心 還有我很謝謝六班老師他幫了我很多忙我也做不出布丁 所以我決定有機會我也會做東西給他吃 希望下次也能在他的指導下做菜. 訂閱： 張貼留言 (Atom).
