In our mountain valley, cold air cascades off the Rocky Mountains each summer night to blanket the fruit trees with chilled air. In the morning, the summer sun quickly warms the valley. There is often a 60 F difference between night and day. Due to these extreme temperature variances, sugars are concentrated in the fruit and the result is our naturally sweeter apple sauce. A Touch of Provence in Colorado'. Skip to primary content. Skip to secondary content. Our vineyards cover 4 acres of our 54 acre farm. We grow two hybrid varieties Chambourcin and Cayuga. All of our grapes are raised organically. The vineyard is in the West Elk American Viticultural Area (AVA) and we share grapes, knowledge, experience and the occasional glass of wine with the other vintners in the area. We use local fruits when in season to make small quantities of delicious fruit wines.
