As a former vegetarian cooking mostly for non-vegetarian folks, I've decided to adopt a "less-meatatarian" vibe. Wednesday, September 14, 2011. It's good for you. 2 c Non-fat Greek yogurt. 2 tbsp. Chopped garlic. 1/2 of a cucumber, peeled if the skin is tough and chopped into small-ish pieces. Juice from 1/2 a lemon. 1 tbsp. Fresh Dill, chopped (optional). 1 tsp black pepper. This lovely (to the taste buds, if not the eyes) comes from a lovely (to the eyes) blog called Indian Simmer. Unlike a lot of Indian restaurant food, this recipe uses non-fat yogurt to make the sauce rich and tasty, and because it has a minimum of oil, it's really pretty healthy. 1 lb boneless chicken breasts or thighs, cut into bite-sized pieces. 1 tsp lemon juice.
