Monday, May 11, 2015. GF Vanilla Orange Muffins. I absolutely love these gluten-free muffins with a big cup of darjeeling. Check out http:/ www.teacampaign.ca. For some great Darjeeling! GF Vanilla Orange Muffins. 2 1/2 cup oat flour. 1 Tbs baking powder. 1 cup cream (or milk). 1 Tbs olive oil (or butter). 2 tsp shaved orange peel. 1) Preheat oven to 350F. 2) Mix all ingredients together in a bowl. 3) Scoop a little more than 1/4 cup into each muffin tin. 4) Bake for 20-25 minutes. Find the gluten-free crust recipe here: https:/ simplygluten-free.com/blog. 3 to 4 nectarines. 1 1/2 Tb tapioca flour. 1) Mix together the flour, sugar, salt, vanilla, cardamom, and ginger. 2) Cut up nectarines into thin slices. 3) Mix nectarines in lemon juice and vanilla. 4) Pour flour mixture into nectarines and mix together. 5) Arrange nectarines in uncooked tart crust. Friday, August 8, 2014. Gluten-Free Earl Grey Tea Cookies. Yesterday I tried out a Lemon Earl Grey Cookie recipe from http:/ www.tastyeatsathome.com. Since I didn't have the exact ingredients, I made some alterations- and the results were beautiful! I'm not a big fan of quinoa flour in desserts since it's more bitter. I used brown rice flour in it's place and it worked great. I also used real butter in this recipe- because what are tea cookies without butter? Earl Grey Tea Cookies. 2/3 cup tapioca flour.

Sunday, June 8, 2014. Yesterday I just had a longing to bake a cake. I ended up making this delicious gluten-free lemon cake. Here's the recipe that I followed: http:/ www.simplyrecipes.com/recipes. The only thing I did different was add a teaspoon of vanilla! I pretty much put vanilla in everything. I rarely make gluten-free cakes but I love how this one turned out. It's very soft and spongy- which is rare for a gluten-free cake. Normally gluten-free cakes are super dense. Fig Cranberry Walnut Cookies.
