The College Cupcake: May 2010
http://thecollegecupcake.blogspot.com/2010_05_01_archive.html
The next week, I decided to make the chocolate and the green tea macarons, and the green tea batch turned out great. Yet again, I burned the second pan of the chocolate, and they had to be thrown away. It is my goal now to figure out what the heck I'm doing wrong, and why it only seems to be the chocolate that's doing it. 3 oz almond flour. 52 oz powdered sugar. 1 packet green tea. 3 large egg whites (3 oz.). Pinch cream of tartar. 22 oz granulated sugar. Green food coloring (optional). Macaronnage: Pour...

The College Cupcake: June 2010
http://thecollegecupcake.blogspot.com/2010_06_01_archive.html
And it's all thanks to Tartelette. This is probably my favorite macaron recipe. Mostly because I just love the raspberry flavor, it's fruity and sweet while not being too sugary. The other reason I loved these so much is because of the feet. I was so excited when I popped these out of the oven and the feet were still there when they cooled down. I knew that Tartelette wouldn't let me down. You can find the recipe for Tartelette's raspberry macarons here. Until next time,. S June assignment was strawberry...

The College Cupcake: Tiramisu. Capiche?
http://thecollegecupcake.blogspot.com/2010/12/per-favore-grazie-capiche.html
I bought this wonderful cookbook, The Pastry Queen. A few months ago and fell in love with it when I first opened the cover. The photographs make your mouth water and the author writes cute passages at the beginning of each recipe. After weeks of flipping through pages debating what to make, I finally settled on a favorite of mine-tiramisu. In the fridge, and it's much better after it has rested for a long while. Tiramisu with Homemade Ladyfingers-recipe by The Pastry Queen. 7 large eggs, separated.

Melt in Your Mouth Caramels. I've always been a little intimidated to put sugar and cream into a pot and let it steep up to a whopping 245 degrees. But recently I decided to be a little daring. And this was the wonderful product. And since they're individually wrapped, these puppies would make a great gift for a friend with a sweet tooth. I like to wrap them up even if I'm just keeping them for myself. Something about a pile full of empty wrappers in front of me makes me decide that I don't need ...Light...

The College Cupcake: Pumpkin Is Timeless.
http://thecollegecupcake.blogspot.com/2010/11/pumpkin-never-gets-old.html
I realized my last post was about pumpkin. And this post is about pumpkin. But truth be told, I can't get enough pumpkin. Especially on Thanksgiving. To me, there are a few things about Thanksgiving that never get old:. Spending time with my wonderful family. Hearing my brother jokingly yell "this needs more salt" numerous times from the living room. Eating until it hurts, and then some more. That being said, make this pie! Pumpkin Cream Pie-recipe by Joy the Baker. 2 Tablespoons granulated sugar. Beat c...
