This light, full-flavoured and mega-tasty Mexican chicken and guacamole dish is quick and easy to make. There’s a bit of chopping to do but very little cooking involved. It’s a perfect dish to make when you want to eat flavoursome healthy food but haven’t got the time, or energy, to spend a lot of time cooking. 1 teaspoon dried chilli flakes (depending how spicy you like it to be). Spiced Tomato And Peppers. Turkish menemen is a delicious spiced tomato and red pepper (bell pepper) dish with eggs cooked on top. It might not be something you would eat before running off to work but it is a perfect dish to eat as a late breakfast on a day off or as a light lunch. I serve it with lots of peppery rocket (arugula) leaves and watercress and some really good bread.
