Friday, June 4, 2010. 8 - 10 ears of GOOD sweet corn. 1 bell pepper (doesn't matter the color although I like GREEN for this recipe). 2 or 3 summer squashes or zucchinis. 2 tbsp olive oil. 1/3 cup balsamic vinagar. 10-15 leaves of FRESH basil. 1 tbsp minced garlic. What you need: pitted dates, water, Chocolate Silk, Silken tofu, flax seed, vanilla, baking soda, cocoa powder, brown sugar, all purpose flour. You begin by putting one cup of dates in half a cup of water in a small sauce pan or pot and just bringing them to a boil. Remove it from the heat and let it cool just a bit. Preheat your oven to 425. Add to the flax seed one and a half cups all purpose flour.

This is something I came up with after trying different variations on my mother-in-law's Boston Baked Beans. It's a yummy recipe to serve over rice with sliced avocado on top. YUMMO! And really not THAT spicy). 2 1/2 - 3 cups beans (black and pinto, but more black than pinto), sorted and soaked overnight. 8 oz diced green chilis. 1/4 - 1/3 cup vegetable oil. 1 tsp ground cumin.
