the beautiful diabetic: April 2011
http://thebeautifuldiabetic.blogspot.com/2011_04_01_archive.html
Saturday, April 30. On our most recent trip back to America, I was surprised to see the presence of Almond milk in the grocery stores in the dairy section right next to cow's milk. When I last lived in the states in 2003, you had to go to the health food store to get it. I was also impressed at how cheap almond milk is! Desperate times call for desperate measures. How hard can making homemade almond milk be? Not hard at all is the answer! I can get raw almonds in bulk for about $11 a KILO here (that's ab...

the beautiful diabetic: Finally a homemade mayonnaise worth writing about! MCT mayo!
http://thebeautifuldiabetic.blogspot.com/2014/02/finally-homemade-mayonnaise-worth.html
Wednesday, February 19. Finally a homemade mayonnaise worth writing about! I have a love-hate relationship with homemade mayonnaise. I have known about the horrors of conventional mayo, (rancid soybean oil anyone? Not to mention the sugar and poor quality eggs used to make it. I knew I could do better than Hellman's. Until I couldn't do better. I love my Hellman's, (cue 'bring out the Hellman's and bring out the best! Too bitter. Avocado oil? Never heard of MCT oil? It's like coconut oil on crack! MCT oi...

Saturday, November 26. The Great Butter Debacle of 2011. I was in London this week when I received word from a friend that I had better buy butter while there because Norway was out. Yes, Norway, the COUNTRY is out of butter. How this happens, I am a bit unsure, but the dairy industry has been quick to blame the low-carb dieters and lower than average production levels. So, we got out the stand mixer and our cream and measured out 2 cups:. Every once in awhile, have a peek in and look:. Then use your han...

the beautiful diabetic: Super Grain & Nut Free Tortillas
http://thebeautifuldiabetic.blogspot.com/2015/01/super-grain-nut-free-tortillas.html
Sunday, January 25. Super Grain and Nut Free Tortillas. You can follow Maria's recipe using almond flour or you can follow mine using my new favorite faux flour:. This is reduced fat sesame flour. It's high in protein, gluten free, nut free and much lower in fat and calories compared to almond flour. I'm not sure if the company is Norwegian, but I have seen their products on Amazon UK- not sure how popular it is in America yet. But I have found it works great in these types of recipes. 1 cup boiling water.

Tuesday, January 18. Low Carb Almond Joy bars! I'm clearly not the first to have had this idea. I then saw that the author of one of my favorite blogs was among the hits returned. Healthy Indulgences. If you are new to this whole low carb, healthy (yes healthy) way of eating, don't be frightened by some of the strange ingredients we tend to use like erythritol, coconut oil, xylitol and xanthan gum. Seriously, just go buy them. You will thank me for it later. Please excuse the tacky fingerprints in the ga...

the beautiful diabetic: Low Carb, Paleo Sushi- and No, I'm not kidding.
http://thebeautifuldiabetic.blogspot.com/2014/06/low-carb-paleo-sushi-and-no-im-not.html
Friday, June 27. Low Carb, Paleo Sushi- and No, I'm not kidding. I've thought a few times about how I could 'paleo-fy' it, but really, how do you do a sushi roll with no rice? But, I've been craving sushi something fierce lately, so on my hour long commute to work, I've been putting this together in my head over the last week or so. I got the idea when I made a recipe for bacon, zucchini, feta rolls found here. I had decided to make a California roll for this experiment, so assemble the cast of character...
