We became hooked ourselves and decided to make this the main meat product from our flock of pedigree Ryeland sheep. Subscribe to our newsletter? Whether you like a nice gammon steak for tea or a joint to feed the family (with ham sandwiches from leftovers), we think youll agree that our gammon is absolutely delicious. Subscribe to our newsletter? We do both wet and dry cured gammon. The wet cure is cured in brine for three weeks, rinsed, hung to dry and packed. The dry cure is a sweet cure (our own secret recipe), and is cured in salts for a week, rinsed and then hung for a week before packing. With lots of suggestions.

The Story of a Smallholding. January 4, 2015. Ok so yesterday it was all about waterproofs as I dripped around the farm, cleaning out water troughs and feeding the animals. Today was freezing and was all about breaking ice and checking all the stock were ok and had enough bedding and giving them their food.
