從小到大，去小館子想不到要吃什麼，來碗滷肉飯就對了，. 豬絞肉400g，可以買半斤600g，抓一些起來冷凍保存，日後使用. 其實大部份做法是需要額外使用由紅蔥頭炸出來的油蔥酥，與蒜頭炸出來的油蒜酥，但我不喜歡廚房充滿油炸味道，所以直接已新鮮紅蔥頭與蒜頭代替). 預備食材，將紅蔥頭、蒜頭洗淨切末，蒜頭可以去市場買已剝好皮的來使用，不然剝皮就會佔去很多時間，帶皮豬五花有耐心的切成約1立方公分大小的肉丁。香菇浸軟切粒(Tip1)，雞蛋煮成白煮蛋(Tip2)。 熱鍋，不加油直接放入已切丁的帶皮豬五花，因為豬五花炒熱後會釋放出天然油脂，所以就不需要額外添加任何油品了。待豬肉慢慢釋放出油脂後，就把鍋子轉一轉讓油脂怖滿鍋子以免之後的食材燒焦。 - -步驟2是阿粒師自己獨家研發的喔～顆顆！ 把帶皮豬五花推到鍋子一邊(或起鍋，但我懶就直接推到一邊)，放入紅蔥頭末炒香後放入蒜頭末，因為蒜頭比較容易燒焦所以晚點再下，一同炒香後放入豬絞肉與紅蔥頭末、蒜末、帶皮豬五花丁以中火炒散開至五成熟。 加入白胡椒粉後，下水攪拌，蓋上鍋蓋，以小火煮約45分鐘到1小時即可。 煮到醬汁比較收乾之後，取出魚排和其他材料&#65292...
