It's quite quick and easy to make (half hour if everything is available), and is a huge hit at my house. 1 diced yellow onion. 2-3 cloves minced garlic. 1 Tbsp olive oil. Heat the olive oil in a soup pot and brown the onions over medium heat - just a few minutes until they're tender and translucent. Add the garlic and brown for another minute or two.

Cut potatoes into fries, soak in very hot water for up to half an hour. Dry them off and dry out the bowl. Toss with a bit of olive oil and lots of salt and pepper.
