Happy Kitchen Treats: Mom's Beef Stew
http://happykitchentreats.blogspot.com/2013/07/moms-beef-stew.html
Thursday, 25 July 2013. You know how you think stew is going to taste when you see it? That meaty, salty, comforting taste. This stew is purely that. It's almost nothing but beef itself, with potatoes added in the end. The flavour comes from the beef mixed with super super caramelised onion, with just a tiny bit of carrot. This is my mom's showstopper- the thing that always makes her kitchen a happy place, even when times are difficult. 1 kg chuck beef. 2) Chop the onion finely. 8) Cook for 4 hours, stir...

Happy Kitchen Treats: November 2012
http://happykitchentreats.blogspot.com/2012_11_01_archive.html
Monday, 19 November 2012. A Castle Fit for a Princess. The perfect cake for the perfect little princess. My friend Megan's little girl Mia turned 2 recently, and I LOVE making little girl cakes! On the day all the little girls crowded around whispered "wow" to each other - it was so cute! In real life I've been sitting at a computer or book all day, giggling like a real geek at countless pictures of cats. My exam is over and I can get back to my happy things again! Happy Kitchen Treats: June 2012
http://happykitchentreats.blogspot.com/2012_06_01_archive.html
Wednesday, 27 June 2012. Maybe it's not summer in Italy. But making and eating bruschetta makes me feel that way. I feel. Beautiful and sophisticated. Like I'm wearing a silk scarf and giggling over a lunch with too much good wine. I really loved this dish- it's like a gateway to appreciating more complex flavours. I find it hard to try new things with food, so I try to take a small step at a time. I love it when it pays off! The stinging I felt on my fingers from the tomato juice hurt so good! 1) Put th...

Happy Kitchen Treats: July 2012
http://happykitchentreats.blogspot.com/2012_07_01_archive.html
Monday, 16 July 2012. I never felt brave enough to try a lemon meringue tart. It's like. In a series, where there is always a boy and a girl, and they're obviously crazy about each other, but afraid to go with their feelings because they don't want to mess up a relationship that means SO much to them. Yup- that's me and lemon meringue tart. And this is just the beginning of our happy ending. Any friend of food is a friend of mine :-). I've been crushing on The Food Fox. Anyway- that one disappeared so qu...

Happy Kitchen Treats: The Ruskis are Here
http://happykitchentreats.blogspot.com/2011/09/ruskis-are-here.html
Wednesday, 21 September 2011. The Ruskis are Here. I've been wanting to make these for a while, but the amount of time it takes has always put me off. Not this time! I've been stealing delicious buttermilk rusks from Morne, who sits next to me in the office, and I decided that I liked them enough to try to make my own, so it was time to pay him back. I wanted to have home made rusks at home because it makes it more of a home, as all baking does. And these last longer! 125 kg cake flour. 3 extra large eggs.

Happy Kitchen Treats: Giant Travel Cookies
http://happykitchentreats.blogspot.com/2011/09/giant-travel-cookies.html
Saturday, 10 September 2011. I made these for them to take along in the car. They come from my favourite blog: Tracey's Culinary Adventures. And they got RAVE reviews. They are thick and gorgeous. Cookies here are usually pretty small and almost don't fully constitute a treat. These are that treat that comforts you or gives you that special moment sharing it with someone you love. Mmmmm Indulgent and chocolatey. The Perfect Chocolate Chip Cookie. 220 g cake flour. 1/2 tsp baking powder. 9) Place large ba...

Happy Kitchen Treats: April 2013
http://happykitchentreats.blogspot.com/2013_04_01_archive.html
Tuesday, 30 April 2013. Home Lure: Beef and Dark Ale Stew. What do I do when my husband is working long hours, and I want to inspire him to spend some more time kissing this face? I go all out. All out means bringing him slippers, spending hours making supper, the bringing of the tea, and plenty of the flicking of the hair. Beef and Dark Ale Stew. Adapted from Ms. Buena Vida. 1 kg chuck beef. 1 bottle dark ale (less than 500 ml). 1 can chopped tomatoes, drained of excess juice. 1 cup tomato juice. This s...

Happy Kitchen Treats: Duck Breast with Green Peppercorns
http://happykitchentreats.blogspot.com/2013/07/duck-breast-with-green-peppercorns.html
Monday, 15 July 2013. Duck Breast with Green Peppercorns. I'm not a bit fan of the fancy. I have no time for men in suits and ties unless they have a redeeming feature, like messy hair or a tie with tiny ducks in a row. In my opinion whimsy is the only thing that can save the fancy. My cake magician friend Erin. Chose this dish from the Larousse. Duck Breasts with Green Peppercorns on a Bed of Rice. 2 x duck breasts. 125 ml chicken stock. 1/2 cup Basmati rice. 500 ml- 1 litre chicken stock. 3) Turn the b...

Happy Kitchen Treats: Spaghetti Monsters
http://happykitchentreats.blogspot.com/2012/05/spaghetti-monsters.html
Tuesday, 1 May 2012. Pasta in Viennas for Kids. I've missed this blog! I've been away for almost 3 months now? Wow it's been a long 3 months. But before we get to that, let's talk about Sophie. Sophie is a picky eater, and a picky everything else. Her being one of my favourite people in the whole world though, I'm determined to please. I wanna say these did the trick. In all honesty, she did say 'yuck' between bites- but she finished it all! Pasta in Viennas for Kids. Package of dry spaghetti. I noticed ...
