Friday, September 11, 2009. More of the Up To's. Now that Scott has started school, William and I have even. Time together. Scott leaves around 5:30 in the morning to beat traffic, and stays after school to avoid traffic, putting him home around 8:00-8:30 each night. It has definitely been an adjustment (that we're still trying to get used to), but I'm very lucky to have such a happy (most of the time) little boy to keep me company. Saturday, May 26, 2012. 2 cups cooked quinoa (about 3/4 cup uncooked). 1 cup shredded or diced vegetables (I've used steamed broccoli and sauteed spinach). 1 cup shredded cheese (I used sharp cheddar). 1/2 cup diced meat or additional vegetables (I used ham). 1/4 cup parsley, chopped (omitted). 2 Tablespoons parmesan cheese. 2 green onions, sliced. Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix to combine. A delicious, portable snack.
