(The cocktail is also available at the bar.). 3 ounces Channel Islands Rum. Ounce fresh lemon juice. 1 ounce fresh lime juice. 2 ounces passionfruit syrup. To make honey syrup, put ounce of honey and ounce of water in a small saucepan. Bring to a boil, stirring, just until honey has dissolved. Take off the heat and cool. 2 oz light rum.

1112014 our first pairing. We paired the Diesel. Grind" robusto with Glenfiddich Single Malt Scotch Whisky. It is aged 21 years and finished in rum casks. The Diesel Grind Robusto is full bodied yet smooth and has hints of earth, cedar, coffee, and spices over a creamy tobacco core. An intense and vanilla sweet aroma, floral with hints of banana. Channel Islands Distillery Pork Chops. 1 teaspoon powdered ginger (smoked if you can get it). 1 cup of dried cherries. 1 cup Channel Islands Immature Brandy. Season the pork chops with ginger, pepper and salt to taste. Sear in hot olive oil on both sides. Add dried cherries and Channel Islands Immature Brandy to skillet and reduce till thick. Add a pinch of nutmeg and cinnamon. Cover and cook till done (I don’t know how long because I don’t know how thick your chops are). Food and spirit/cocktail pairings.
