Cooking with wine can add flavor and body to an otherwise dull meal. When making a beef stock, I learned from working at Vineland Estates how wine can add quite a bit of flavor and kick to the average stock. I would recommend a full bodied red wine. Add red wine to beef stock. Chef deglazing a pan. My favorite: a saffron bouillabaisse.

I never gave much thought to how Halloween promotes local eating, however I have come to realize that most holidays are bound by tradition and reflect back to how our ancestors were living and taking advantage of seasonal foods in celebration.
