Before grad school started, I determined that I would make healthy homemade granola bars on a weekly basis, to enjoy with my morning brewed coffee (organic beans from Cole Coffee. Brewed one cup at a time with my manual drip Melitta cone filter. I also planned to make healthy pasta salads with steamed mixed veggies that I would bring for lunch. Bribe Me with a Muffin.

When soybeans are made into soymilk (which can then be made into tofu), there is a byproduct created known as soy pulp or tofu lees - or okara in Japanese. Fresh okara is fluffy and white in color. It is low in fat, high in fiber, and also contains protein, calcium, iron, and riboflavin. I discovered okara at San Jose Tofu. Is a great resource. 1 Tbsp baking powder.
