Other Local Meats, Produce and Eggs. Lambs are ready for your kitchen in October-November, and each lamb provides between 46-52 lbs of bone-in meat ("hanging weight"). Deboning the cuts results in about 23-26 lbs of meat. A full lamb share contains the following cuts and approximate weights (bone-in):. 2 legs at 6 lbs each. 14 lbs of front shoulder (center and blade cuts). 8 lbs of loin chops. 2 lbs of rack. 4 lbs of ribs. 6 lbs of shank. 15 lbs of stew meat and 1.5 lbs of ground.
