Baby Pods! | Lonohana Estate Chocolate

https://lonohana.wordpress.com/2011/08/03/baby-pods

Growing cacao and making chocolate on Oahu. August 3, 2011. Posted by lonohana under Trees. Very, very exciting to find the first pod set at our Opaeula farm this week. After caring for these trees from seedling on, it almost feels magical to see them set fruit. Leave a Reply Cancel reply. Enter your comment here. Cacao, Agriforestry and Climate Change | Lonohana Estate Chocolate

https://lonohana.wordpress.com/2009/10/16/cacao-agriforestry-and-climate-change

Growing cacao and making chocolate on Oahu. October 16, 2009. Cacao, Agriforestry and Climate Change. Posted by lonohana under Diversified Agriculture. Michael Niemann’s blog Bitter Chocolate has a great post today about cacao, forestry, and Francois Ruf’s concept of “Forest Rent”. It’s well worth checking out, and relevant for our purposes as it describes exactly what we’re trying to roll back (in our admittedly small way) here in Hawaii. 2) Economic. Even in the coming age of carbon markets and cap...

Growing cacao and making chocolate on Oahu. November 9, 2012. Growing chocolate on Mars. Posted by lonohana under Uncategorized. X-ray analysis of Martian soil samples. Has recently shown that the structures are quite similar to the basaltic soils we have here in the Hawaiian islands. Explains a lot, really🙂 Now if we can just warm that planet up a bit (and maybe recreate an atmosphere), we’ll have a vast new chocolate territory…. Leave a Reply Cancel reply. Why local? | Lonohana Estate Chocolate

https://lonohana.wordpress.com/2011/12/30/why-local

Growing cacao and making chocolate on Oahu. December 30, 2011. Posted by lonohana under Culture. Having relocated myself and my family several thousand miles to the middle of the Pacific to grow cacao, all just to make a truly local chocolate, I sometimes have to ask myself: why? Turns out there are a few issues that drive me, so just a quick end-of-year summary here, if only to remind myself:. The bulk of commodity cocoa relies on freebies from nature to stay cheap. 4 Responses to “Why local? From your ...

Listening to the weeds | Lonohana Estate Chocolate

Growing cacao and making chocolate on Oahu. February 3, 2012. Listening to the weeds. Posted by lonohana under Diversified Agriculture. 8220;Plants become weeds when they obstruct our plans, or our tidy maps of the world.”. That’s the first sentence of a wonderful book I’ve been reading called Weeds by Richard Mabey. So, chalk another one up for nature. She has a way of educating, even if we sometimes don’t want to listen. One Response to “Listening to the weeds”. May 19, 2012 at 7:14 pm. You are comment...

Lonohana Estate Chocolate is located on the island of O‘ahu, Hawaii and is the result of two families’ dream to create a vertically integrated chocolate company here in the United States. By controlling the entire product cycle, starting with our own Hawaii-grown cacao all the way through crafting small batches of world-class chocolate bars in Honolulu, we hope to share where this beloved food comes from, how it is grown and made. And the finest quality chocolate.

Lonohana Hawaiian Estate Chocolate: Our Story--Quality

http://www.lonohana.com/story_quality.html

I’m obsessive enough to want control over processes that as a chocolate maker you rarely really have. Verticalizing this particular food is extraordinarily challenging, given the breadth of knowledge required just to get results up to a minimum standard. But there is no substitute for enjoying a truly local and delicious chocolate that you know you grew, fermented, dried, roasted, ground, conched, tempered and molded yourself.

Lonohana Hawaiian Estate Chocolate: Our Story--Rusty Klassen

http://www.lonohana.com/our_story.html

In 2011 my childhood friend, his wife and their son joined my wife, daughter and me in this adventure. We expanded our orchard to the current 14-acres and built a chocolate factory in Honolulu. Over Thanksgiving week 2012, the six of us made our first 100% estate grown chocolate bars, and in May 2013 we began to release bars to the founding members of our Chocolate Club.

Lonohana Hawaiian Estate Chocolate: Orchards

http://www.lonohana.com/orchards.html

We currently source our cacao from our Lonohana Estate orchard on the North Shore of O‘ahu. It is estimated that in the entire state of Hawaii there are fewer than 150 acres planted to cacao, with most plots being not more than - acre. In future years, we hope to expand the number of sites within our estate orchards to further explore how terroir plays a role in Hawaiian chocolate. Lonohana Estate, North Shore, O‘ahu.

Lonohana Hawaiian Estate Chocolate: Chocolate

http://www.lonohana.com/chocolate.html

As well as pure chocolate bars, we produce an ever-changing array of bars that incorporate organic Hawaii-grown inclusions. These can vary from coffee, macadamia nuts, cacao nibs, sea salts, fruits and spices and while the list will always change based on what we find in season, we will always aim for 100% Hawaii-grown ingredients.

Lonohana Hawaiian Estate Chocolate: About Us

http://www.lonohana.com/factory.html

What's in a Name? Lonohana is a mash-up of two Hawaiian words. The first word is lono and the second is ‘ohana. In Hawaiian mythology, Lono is the God of agriculture, rain, fertility, music and peace. A pretty cool dude! There are even more hidden words and stories that can be found in Lonohana, but we'll leave those for another time. Perhaps when you come and visit!
