The Random Thoughts of a Yarn and Word Lover. August 8, 2015. I made delicious vegan blueberry pancakes the other morning. Served them up with Trader Joe’s delicious meatless breakfast patties, Canadian Maple Syrup and a glass of orange juice and it hit the yummy tummy spot. 1 cup whole wheat flour. 3 teaspoons baking powder. 1 3 cup blueberries. Mix together flour, baking powder and cinnamon. Add soy milk and blueberries and stir gently in. Do not over stir. When they are ready, flip the pancakes over.
