Use up your zucchinis in this nutritious zucchini bread. Preparation and Cooking time:. 100 g ¾ cup sultanas. 4 tbsp orange juice. 175 ml ¾ cup sunflower oil. 200 g 1 cup light brown sugar. 225 g 2 cups self-raising flour. Frac12; tsp baking powder. Frac12; tsp bicarbonate of soda. 60 g ½ cup chopped nuts, e. g. walnuts, almonds. 250 g zucchini, grated and drained. 1 small banana, chopped. 1 unwaxed lemon, finely grated zest. 1 Heat the oven to 180°C (160° fan). Grease 10-12 ramekins.

Spinach and feta mini frittatas. These tasty frittatas use one 120g bag of pre-packed spinach leaves. You can add other cooked vegetables as well. Perfect for a grab and go breakfast or easy lunchbox filler. Preparation and Cooking time:. Makes 12 mini frittatas. 2 tbsp olive oil. 2 onions, chopped. Frac14; tsp pepper. 120 g spinach, washed and chopped. 75 ml cup milk. 125 g feta cheese, diced. 1 Heat the oven to 180°C (160° fan). Grease 12 muffin tins. 4 Bake for 10-12 minutes until puffy and golden.

A couple of vegetables and a pantry staple come together to make this tasty salad. Preparation and Cooking time:. Makes 4 servings - Cannot be frozen. 180 g 1 cup couscous. 225 ml 1 cup boiling water, or vegetable stock. 1 - 2 large tomatoes, chopped. 1 cucumber, chopped. 2 tbsp chopped parsley. Frac12; tbsp chopped mint. 4 spring onions, chopped. 50 ml 10 tsp cider or white wine vinegar. 50 ml 10 tsp extra virgin olive oil. 2 Add the vegetables and herbs to the couscous and stir with a fork to mix.

One heaped tablespoon Nutella. Vanilla sugar for dusting. One portion of pizza dough. Set oven to high 220 degrees Celsius. Stretch dough to a small pizza base. Spread Nutella in the centre.

My all-time favorite Chinese restaurants are Mann Hann and Hap Chan; our family used to go to either of these after Sunday Mass or whenever there’s a special event to celebrate. Anyway, Gloria Maris caught our eye that day, because they were offering combo meals which only cost between 120 to 140php.
