We opted for an Irish stout, traditionally made with large proportions of unmalted (flaked and roasted) barley as a tax dodge. Dark roasted barley gives a distinctive-looking top dough. 16lbs Gleneagles floor-malted Maris Otter. 4 lbs Flaked barley. 2 lbs Roasted barley. 1 lb Acidulated malt. 2 oz Target 10.8% at 60.
