I took these pictures on the beach in Juno, FL, where my folks live in the winter, and where most of my family has been living for almost 40 years. It is about 30 minutes north of West Palm Beach on the Atlantic coast. The Gulf side is nice enough, but the Gulf of Mexico is a swamp. The Atlantic is an ocean. On this particular late spring morning, however, it was about as calm as it gets. It still gets me every time...

There is something elegant about meticulously beating flavor into grains of rice. And, once the basic technique is learned, there are endless possibilities. Seafood, mushrooms, and vegetables all work well in risotto when they are in season - even just a plain risotto can be completely satisfying. Use a good wooden spoon. 2 C Arborio rice. 1 Qt cold water.

There a great selection of work and some are very reasonable. The Allman Brothers playbill was from his personal collection. It even has water damage from when his office was firebombed in 1985.
