So I’m trying to pull myself together, nutritionally. We don’t eat really. We have good intentions though, and a fridge full of veggies that are beginning to head south. It was the perfect time to make up a big pot of soup. Use up some veg and have some healthy food in the fridge that I could have for lunch, instead of salt and vinegar chips. 2 tb olive oil. 3 carrots, peeled and chopped. 1 medium onion, chopped. 1 bell pepper, chopped. 3 cloves garlic, minced. 5 cups vegetable broth (or chicken).
