Tomato-Avacado Grilled Cheese Sandwiches. 1 ripe avacado, halved, seeded and peeled. 1 tbsp lemon juice. 1/2 tsp groun cumin. 8 slices whole grain bread. 6 ounces Monterey Jack cheese, sliced. 1 large tomato, thinly sliced. 2 tbsp butter, softened. 1 In a small bowl, mash together avacado, lemon, cumin and salt, stir in parsley.
