She asked for a healthy alternative to the usual "pasta bake/enchilada" meals normally brought to new mothers. 2 T olive oil. 3/4 cup chopped onion. 1 med leek, thinly sliced. 1 cup diced carrot. 3/4 cup diced celery. 2 cups diced zucchini. 1 med fennel bulb, quartered and thinly sliced. 3 garlic cloves, minced. 4 cups low-sodium chicken stock (or water). 1 cup packed, chopped kale.

Think Love Sleep Eat. Over Christmas in the Rocky Mountains this year my sister got up each morning and made her favorite breakfast treat: Rice and Eggs with cheese. Her daily breakfast was so beautiful and unique I HAD to include it in the blog. This dish is best, I think, with an over-easy egg. With a soft yolk can mix the golden goodness in with the rice and melted cheese. Not to mention the fact that it's the perfect breakfast to fuel a day of winter sports! 1 cups uncooked rice. 1-2 T shredded cheese.
