My Encounter with Bread. 水75g / 高粉75 g /鹽少許/ 酵母粉1/16小匙). 1 先將紅酒與桂圓肉放入小鍋子內，以小火煮開後，續煮約三分鐘即可熄火放涼，倒入有蓋的容器內冷藏至少一天( 紅酒要使用沒有甜味的，煮開讓酒精蒸發掉，這樣麵糰會比較容易發酵。). 2 把所有液種材料拌勻.室溫發酵至二倍大.再放冰箱冷藏一夜. 3 要使用前，先用小網篩將桂圓肉與紅酒過濾分開。紅酒加入少許的水，一共200gl的份量備用. 4 在鋼盆內放入液種, 高筋麵粉、酵母粉、糖及鹽，全部拌勻，緩緩加入紅酒液及橄欖油，全部材料拌勻成麵糰後，再加入桂圓肉，用手將麵糰揉合均勻至無粉粒的狀態（麵糰不黏手） 5. 將麵糰放入容器加蓋，置於室溫發酵約1.5小時後，放入冰箱冷藏至少5小時(前一天晚上做，隔天早上即可取出). 6 隔天早上取出低溫發酵完成的麵糰後，置於室溫回溫1小時，將麵糰置於撒有麵粉的揉麵板上，用手輕壓排出空氣. 9 將麵糰放入已預熱至190℃的烤箱內，烘烤約23分鐘. 步驟 1 混合(A) 及搓麵糰 2. 第一次發酵( 約40分鐘 o...
