Veggie Nachos on Sports Night! Veggie Nachos, mmmmmmm! SPORT’S NIGHT VEGGIE NACHOS. Blue Corn Chips (I use Garden of Eatin’s organic gluten-free chips). 1 tablespoon olive oil. Lime juice from lime. 1/2 tsp ground cumin. 1/2 tsp garlic powder. 1 red bell pepper. 1 yellow bell pepper. 1 can of black beans (drained and rinsed well). 1/2 cup low-fat shredded cheese.
